Sparkling Butter Toffee Cookies

These are the best cookies going! Easy to make and oh so yummy!
I made these cookies on the weekend when Sam had a friend sleep over.
I overheard his buddy saying to him as he ate one "Sam your mom is an awesome cook!"
If you can please a picky kid you know they are good!

Here is the recipe:

1 cup sugar
3/4 cup butter, softened
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoons baking soda
1/2 cup English toffee bits or chips (I use the bits)
Sugar

Heat oven to 350degrees. Combine sugar, butter, egg and vanilla in a large mixer bowl.
Beat at medium speed, scraping bowl often, until creamy(1-2minutes). Add flour, baking
powder and baking soda; reduce speed to low. Beat until well mixed (1 to 2 minutes).
Stir in toffee bits by hand.

Shape dough into 1 inch balls. Roll in sugar. Place 2inches apart onto ungreased cookie sheet.
Flatten each with bottom of glass to 1 1/2 inch circles. ( If glass sticks, dip glass in sugar).

Bake for 9 to 11 minutes or until edges are just lightly browned. (DO NOT OVER-BAKE)
Sprinkle with sugar while warm. Cool completely.

  2. Oh Pamela ~ you are torturing me with these!!! I had 2 boiled eggs and a 1/2 cup of fat free yogurt for supper. Somehow, that just does not seem very yummy compared to these cookies!

    must fit into new dress for July wedding... must not eat cookies... must look away...

  6. I love cookies that are rolled in sugar! This is definitely a great recipe...and what a mom you are to bake for your son and his friend! I used to do things like that when my kids were young...thanks for bringing back those memories. Have a wonderful weekend...~Ann
